The key to this salad is choosing the best fruit that is in season. Choose local, choose organic/spray free where possible. Grow it if you can for the full experience. This salad is good on top of your granola for breaky, as a topping for pancakes, with lunch, as a snack with yogurt, or for dessert. It is, that good.

Makes a big bowl of fruit salad (6 healthy servings).

Ingredients

3 kiwi, peeled and chopped into 1/2 cm pieces

1 pint of blueberries

2 naval oranges, peeled and chopped into 1/2 cm pieces

1 pint of strawberries, washed and chopped into 1/2 cm pieces

1 pint of cherries, pitted and chopped into quarters

1 banana, peeled and cut into quarter moons

1 Tbsp apricot or strawberry jam (I like the Barkers with less sugar)

Method

  1. Place fruit in bowl
  2. Add jam and gently mix
  3. Let sit for 10 minutes and gently stir
  4. Serve for breakfast, lunch, dins, or dessert. Or, on pancakes :)
