Grain Free Rhubarb Crumble for Two
Mix together:
1/2 cup Yum Creamy Apple Chai Porridge
2 T melted oil or ghee
2 tsp coconut sugar
In a separate bowl mix:
1 1/2 cups rhubarb, chopped
3 tsp coconut sugar or maple syrup
1 tsp tapioca flour
2 tsp lemon juice
Split the rhubarb mixture into two mini casserole dishes. Sprinkle prepared crumble on top. Bake at 160degrees C for 10 minutes, until bubbly and golden. Let cool slightly before enjoying with some coconut yogurt. Yum!!
