Spring is officially here, which means 'Bircher season' to us! Our Raspberry Apple Bircher the BEST! It is a convenient, functional, delicious breakfast that is actually a complete meal, containing nature's carbs, healthy fats, and nearly 20% protein. It is also packed with fibre! Perfect for breakfast or to break any fast, at any time. We've come up with four amazing, simple recipes that can be made ahead to make it easier to eat a great breakfast on those busy mornings. Enjoy!

Overnight Raspberry Apple Bircher with Yoghurt and Seasonal Fruit (GF & Vegan)

Serves 2

1 cup Raspberry Apple Bircher

1 cup water

4 T your favorite vanilla yoghurt (we love Raglan Vanilla Bean Coconut Yoghurt)

1 NZ grown orange, peeled and sliced

4 strawberries, diced

Mix Bircher with water in a medium bowl. Let sit for a few minutes and stir again. Pour half of each mixture into two small jars or containers with lids. Top with yoghurt and fruit. Refrigerate for up to 3 days. 

Complete Porridge with Blueberries and Ginger (Vegan)

Serves 2

1/2 cup quick cook oats (or flaked quinoa or flaked rice if GF)

1/4 cup Raspberry Apple Bircher

1 1/2 cups water or oat milk

1/4 tsp dried ginger

Big pinch of cinnamon

Pinch of sea salt

1/4 cup blueberries 

1 T crystallized ginger, finely chopped

Option 1: Mix oats, Bircher, and water/oat milk in pan and bring to boil. Turn off and give a good stir.

Option 2 (no cook option): Boil water/oat milk. Pour over oats and Bircher and let sit for a couple minutes. Give a good stir.

Pour into two bowls. Top with blueberries, crystallized ginger, and your favorite yoghurt. Can be made 2 days ahead and kept in the fridge.

Chocolate Chia Pots with Bananas and Almond Butter (GF, Vegan)

Serves 2

2 T high quality cacao powder (we like Cacao Ambassador)

2 T coconut cream

1 cup water

1 T maple syrup (or 1 T allulose for sugar free version)

3 T chia seeds

2 T Raspberry Apple Bircher

Toppings: 1 banana sliced, 2 T almond butter, 70% dark chocolate melted

Whisk together all ingredients except the toppings. Let it sit for 10 minutes to hydrate and whisk again. Pour mixture into two jars with lids. Best if chilled overnight but a few hours will suffice. Top with toppings, finishing with drizzled melted chocolate. Enjoy!

Spring Detox Smoothie (GF, Vegan) 

Serves 1

1/2 orange, peeled

1/4 banana (can be frozen for a thicker smoothie) or replace with avocado to lower the sugars/carbs

4 strawberries (can be frozen)

1 T vanilla coconut yoghurt

1 T plant-based protein powder 

1 T Raspberry Apple Bircher

1 T chia seeds

1 1/2 cups water

Place all ingredients in a blender and blend until smooth. Can be made ahead and kept in the fridge overnight for ease.
