Ingredients

150g butter or coconut oil, melted

3 ripe bananas, mashed

2 eggs

2 c. almond flour or 2 cups Yum Pancake/Baking Mix

3/4 cups walnuts, chopped

1 tsp vanilla

Pinch of salt

1 tsp baking powder (not required if using Yum Pancake Mix)

Method

  1. Preheat oven to 180degrees C and prepare loaf pan with baking paper or some coconut oil
  2. Whip butter or oil, with mashed bananas
  3. Add vanilla and eggs and beat well
  4. Add dry ingredients and mix well
  5. Pour into prepared loaf pan and top with some extra sliced banana and finely chopped walnuts
  6. Bake for 50 minutes, until golden and firm to the touch
