The Best Banana Bread (GF & Paleo)
Ingredients
150g butter or coconut oil, melted
3 ripe bananas, mashed
2 eggs
2 c. almond flour or 2 cups Yum Pancake/Baking Mix
3/4 cups walnuts, chopped
1 tsp vanilla
Pinch of salt
1 tsp baking powder (not required if using Yum Pancake Mix)
Method
- Preheat oven to 180degrees C and prepare loaf pan with baking paper or some coconut oil
- Whip butter or oil, with mashed bananas
- Add vanilla and eggs and beat well
- Add dry ingredients and mix well
- Pour into prepared loaf pan and top with some extra sliced banana and finely chopped walnuts
- Bake for 50 minutes, until golden and firm to the touch
